A healthy option for lunch

Here’s my latest attempt for lunch.

It’s a whole wheat wrap with hummus, then sliced carrots, peppers, shredded red cabbage, avocado and sliced cucumber.

This is the same wrap…well, wrapped up and ready to go. With an apple, a banana and some walnuts, I’ll have an excellent lunch.

The joy of this lunch is the fact that I cut and sliced and shredded tons of extra veggies, so I can make other wraps in seconds now because the ingredients are all ready in my fridge.

What I eat in a day…

Before I started eating vegan, I wondered how people did it. What do they eat for breakfast? How do you think of what to eat for lunch? What about dinner? Now, after a couple of months of doing this, it’s becoming pretty regular and routine for me.

I thought I’d share what I eat in a day. Please keep in mind, I’m very new at this and certainly no dietary genius. I like it, it’s easy to make and it’s vegan. Those are my requirements. We’re not talking Martha Stewart here.

Breakfast

This is my breakfast. Oatmeal with almond milk, with hemp hearts, walnuts, blueberries and a dash of maple syrup. Yum!

Of course, there’s a large cup of coffee in there as well. 🙂

 

Lunch

This is going to look a bit odd because I added nutritional yeast before taking the picture but there are roasted peppers in there, with roasted chickpeas, roasted portobello mushrooms, corn, spinach and rice…oh and a banana for desert!

This one is my fruit smoothie and it’s so yummy, it’s like a treat.

This is my rapini soup. It’s super healthy and really tastes awesome…if you like rapini.
