I’ve never, ever made risotto before but this one is super yummy. It’s pretty labour intensive, because it basically asks you to be stirring the rice for 45 minutes but it’s so worth the work. The taste was unbelievable! Even my meat-loving hubby loved it.

Oh, I did cheat at the end a put a dab of real butter into the dish. Just to be completely honest. Still, man alive, it was good!

Hmm. While I have no trouble believing that was tasty, to me it doesn’t really look like risotto, which is supposed to be creamy– the “whip the butter into it” stage at the end is essential, because it puts some air into it as well. Try this, it’s my favorite risotto recipe– and make sure to use arborio rice.

Thanks for the tip, Luther! Sounds like you know what you’re talking about. I’ll be honest, the amount of butter in it makes me hesitate. I bet it’s tasty but I fear the health repercussions…*wince*
