What I eat in a day…

Before I started eating vegan, I wondered how people did it. What do they eat for breakfast? How do you think of what to eat for lunch? What about dinner? Now, after a couple of months of doing this, it’s becoming pretty regular and routine for me.

I thought I’d share what I eat in a day. Please keep in mind, I’m very new at this and certainly no dietary genius. I like it, it’s easy to make and it’s vegan. Those are my requirements. We’re not talking Martha Stewart here.

Breakfast

This is my breakfast. Oatmeal with almond milk, with hemp hearts, walnuts, blueberries and a dash of maple syrup. Yum!

Of course, there’s a large cup of coffee in there as well. πŸ™‚

 

Lunch

This is going to look a bit odd because I added nutritional yeast before taking the picture but there are roasted peppers in there, with roasted chickpeas, roasted portobello mushrooms, corn, spinach and rice…oh and a banana for desert!

 

Supper

This one is my fruit smoothie and it’s so yummy, it’s like a treat.

This is my rapini soup. It’s super healthy and really tastes awesome…if you like rapini.

  1. Thanks for sharing. I think the hardest part for me would be dinner. Your breakfast is something I eat anyway. I like oatmeal with a banana cut up in it and some walnuts or pecans. I’m fine with salad for lunch but supper I need something a little more substantial. I do one dinner meal a week without meat. I know it’s suppose to be healthier for you but that is as far as I’ve gotten πŸ™‚
